Super Simple Beetroot Stir fry recipe / Beetroot பொரியல்

If you want to make a quick and easy stir-fry for a side dish using beetroots, here's a super simple recipe for you!

Ingredients
  

  • 3 medium sized, or 4 small sized Beetroots
  • 1 Medium sized, sliced Onion
  • 2 Green chillies
  • 1/2 tbsp Mustard seeds
  • 2 tbsp Coconut oil
  • 1/2 cup Coconut grated

Method
 

Beetroot stir-fry recipe
  1. Chop a medium sized onion. Slit the green chillies.
  2. You can choose to chop or grate the beets. I chopped them into small cubes.
  3. In a pan, heat 2 tablespoons coconut oil and add the mustard seeds.
  4. Once the mustard seeds sizzle, add the onions, green chillies and curry leaves.
  5. Saute for a minute. Add 3/4 tablespoon salt and saute until the onion turns translucent.
  6. Add in the chopped beetroot. Add 1 tablespoon of salt and give it a good mix.
  7. Add 1 cup water and let it cook. Stir occasionally and cook until all of the water evaporates.
  8. Now add the grated coconut, mix well and stir for about 2 minutes.
  9. Check for salt and add if needed.
  10. Your beetroot stir fry is ready! Enjoy!
