Spicy Country Chicken Pepper fry recipe / நாட்டுக்கோழி மிளகு வறுவல்

When you have a craving to eat something spicy, something non-veg, chicken pepper fry is an apt dish. And today let’s see the recipe for chicken pepper fry – in particular, using country chicken (naatukoli/naatukozhi).

Ingredients
  

  • 1 kg Country chicken or broiler chicken / நாட்டுக்கோழி
  • 20 about Shallots / சின்ன வெங்காயம்
  • 1.5 tbsp Ginger garlic paste / இஞ்சி பூண்டு விழுது
  • 1 tbsp Fennel seeds / சோம்பு
  • 1 tbsp Cumin Seeds / சீரகம்
  • 1 tbsp Pepper / மிளகு
  • 1/2 tbsp Chilli Powder / மிளகாய் பொடி
  • 1/2 tbsp Turmeric Powder / மஞ்சள் பொடி
  • 2 tbsp Garam masala or chicken masala / கரம் மசாலா or சிக்கன் மசாலா
  • 3 tbsp Oil

Method
 

Country chicken pepper fry recipe
  1. Chop the shallots.
  2. Dry roast cumin, fennel and pepper until you get a nice aroma. Once cooled, grind the spices to a powder.
  3. In a cooker pan, add 3 tablespoons oil. Once the oil is hot, add 1/4 teaspoon fennel seeds.
  4. Once the fennel seeds sizzle, add chopped shallots and fry till transluscent.
  5. Add 1.5 tablespoons of ginger garlic paste and saute well until the raw smell goes away.
  6. Now add 1/4 teaspoon turmeric powder and saute. Add 2 tablespoons chicken masala and saute well.
  7. Add 1/2 teaspoon chilli powder and fry for a minute.
  8. Now add the chicken pieces and give a good mix. Add 1 cup water and also add the ground spice powder.
  9. Mix well, cover and cook for three whistles.
  10. Once the pressure settles, open the cooker and cook until the water evaporates and the chicken becomes somewhat dry. Stir once in a while.
  11. Serve hot by garnishing with fresh coriander leaves.
