Ingredients
Beetroot diced or grated - 500 grams
Chopped Onion - 1 big
Sunflower
Peanut, Sesame or vegetable oil - 2 tablespoons
Mustard seeds / Kadugu - 1/2 tablespoon
Cumin seeds / Jeeragam - 1/2 tablespoon
Urad Dhal / Ulutham Paruppu - 1/2 tablespoon
Chopped green chillies - 2
or required as per your preference
Curry leaves - 1 Sprig
Grated coconut -
Instructions
Wash beets, peel and chop or grate them. Steam the beets for 2 whistles.
Heat oil in a kadai or pan and add cumin seeds, urad dal and mustard seeds.
Add green chillies, ginger and curry leaves in order and saute for a minute.
Add chopped onion and salt and saute till onion becomes soft.
Add the steamed beetroot and mix well so all the ingredients blend well together. Stir fry for about 2 minutes.
Add the grated coconut and mix well for another 2 minutes.
Serve hot with rice.
