One pot easy Veg Kurma for Chapathi or rice / Easy side dish for Chapathi

When you are lazy and want a yummy and spicy veg kurma as side dish for chapathi, you can opt for this one pot kurma which is easy to make in a very lesser amount of time.

Ingredients
  

To grind
  • ½ cup Coconut
  • 1 tbsp Fennel seeds
  • 2 tbsp Roasted gram
  • 7 Garlic cloves  – about 
  • ¾ inch Ginger piece
  • Water – little
For Kurma
  • 1.5 cup Vegetables of your choice (carrots, cauliflower, beans, potato, peas)
  • 2 tbsp Oil
  • Onion – 1 medium sized
  • Tomato – 1 medium sized
  • Cinnamon – 1 inch piece
  • 2 Cardamom
  • 3 Cloves
  • 1 Biryani leaf
  • Curry leaves – a sprig
  • 1.5 teaspoon Chilli powder
  • 1.5 tbsp Coriander powder
  • 1.5 tbsp Garam masala / chicken masala
  • 2.5 cup Water

Method
 

Recipe for easy Veg Kurma for Chapathi
  1. Grind all the things under “To grind” to a fine paste using little water.
  2. Chop veggies of your choice and keep them ready. Slice the onion and tomato.
  3. In a pressure cooker pan, pour 2 tablespoons oil. Once the oil is hot add in the dry spices.
  4. Once they sizzle, add curry leaves. Then add onion and saute till it becomes translucent.
  5. Now add tomato. Saute till it becomes mushy.
  6. Now add in the ground paste along with 1 cup water and mix well. Add chilli powder, coriander powder and garam masala and give it a good mix.
  7. Now add the veggies and add salt. Mix well and add 1.5 cups of water. Give it a good mix and check for salt.
  8. Add salt if you need.
  9. Cover and cook this for 3 whistles. After the steam settles, open the cooker.
  10. Your veg kurma is ready. Enjoy it hot with Chapathi or rice.
