Beetroot Stir Fry With Coconut | Beetroot Poriyal Recipe

Ingredients
  

  • Beetroot diced or grated - 500 grams
  • Chopped Onion - 1 big
  • Sunflower Peanut, Sesame or vegetable oil - 2 tablespoons
  • Mustard seeds / Kadugu - 1/2 tablespoon
  • Cumin seeds / Jeeragam - 1/2 tablespoon
  • Urad Dhal / Ulutham Paruppu - 1/2 tablespoon
  • Chopped green chillies - 2 or required as per your preference
  • Curry leaves - 1 Sprig
  • Grated coconut -

Method
 

  1. Wash beets, peel and chop or grate them. Steam the beets for 2 whistles.
  2. Heat oil in a kadai or pan and add cumin seeds, urad dal and mustard seeds.
  3. Add green chillies, ginger and curry leaves in order and saute for a minute.
  4. Add chopped onion and salt and saute till onion becomes soft.
  5. Add the steamed beetroot and mix well so all the ingredients blend well together. Stir fry for about 2 minutes.
  6. Add the grated coconut and mix well for another 2 minutes.
  7. Serve hot with rice.
